  • 1/2 cup milk

Instructions

Fluffy Eggs

  • To a pan over medium low heat add butter. Once the butter is melted, pour in the beaten eggs and gentle move around the pan bringing the outside into the center until large curds start to form.
  • Season with salt and pepper and cook until the eggs are fluffy.

Breakfast Filling

  • Once the eggs are cooked, transfer to a bowl with the cooked breakfast sausage, American cheese and cheddar cheese. Gently mix together and set aside.
  • French Toast Batter
  • To a bowl, add all ingredients listed under “French Toast Batter.” Beat until fully incorporated and set aside.

Assemble

  • Make an opening through the bottom of each slice of brioche. Be careful not to cut through the bread.
  • Stuffed the opening of each slice with the breakfast filling and gently press around the opening to seal.
  • Heat a pan over medium low heat and add a few tabs of butter.
  • Dip each stuffed slice of brioche into the French toast batter making sure it’s evenly coated.
  • Once the butter is melted, add the battered stuffed brioche to the pan. Cook on both sides for 2-3 minutes until the golden brown and the center is heated through.
  • Work in batches to insure all the stuffed slices aren’t over saturated.
  • Serve immediately with a side of maple syrup and enjoy!

Instructions

Garlic Butter

  • Mix together the ingredients listed under “Garlic Butter “and set aside.

Crab Dip Filling

  • In a bowl add all the ingredients listed under “Crab Dip Filling” EXCEPT for the jumbo lump crab meat and mix thoroughly. Once combined, fold in the jumbo lump crab meat.
  • Once thoroughly mixed, transfer to a pipping bag and set aside.
  • TIP: no pipping bag no problem! Just simply transfer to a ziplock plastic bag and cut the tip off of one end.

Assemble

  • Make 4-5 shallow cuts through each croissant making sure not to cut all the way through.
  • Fill the openings in the croissants with the Crab Dip Filling to the best of your ability.
  • Brush on the garlic butter and transfer the stuffed croissants to a parchment lined baking sheet. Place on the middle rack of a preheated oven at 350F.
  • Bake for 10-12 minutes or until the tops are golden brown and the filling is warmed through.
  • Once baked, topped with remaining garlic butter and chives.
  • Serve while warm and enjoy!

  • 1 box red lobster honey butter biscuit mix 11.36oz
  • 3/4 cup milk

Honey Butter

  • 1/2 stick butter softened
  • 1 tbsp honey
  • Pinch of salt

Fluffy Eggs

  • 6-7 large eggs beaten
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

Sautéed Veggies

  • In a pan over medium heat add oil, the chopped bell peppers and onions. Season with salt and pepper.
  • Cook until the veggies start to brown, about 3-4 minutes.
  • Once browned, set aside.

Sausage Gravy

  • In the same pan, add the breakfast sausage. As it cooks, break up the meat into pieces size pieces.
  • Cook until the sausage is crispy and browned. This should take 5-6 minutes.
  • Add in the flour and stir to combine. Once the flour is absorbed, add the heavy cream and season with salt and pepper.
  • Allow the sauce to cook and thicken for 2-3 minutes.
  • Once the right consistency is reached, remove from heat and set aside.

Honey Butter Biscuit Topping

  • To a bowl add the dry biscuit mix and milk. Using a fork, mix together until the dough starts to form. Be care not to over mix here. You really just need to stir enough to get a shaggy dough.

Honey Butter

  • In a small bowl, mix together all ingredients listed under “Honey butter” and set aside.

Fluffy Eggs

  • To a pan over low heat, add olive oil and butter.
  • Once the is melted and bubbling slightly, pour in the beaten eggs.
  • Using a spatula, gently move the beaten eggs around until curdles start to form.
  • Continue until the curdles get larger, then season with salt and pepper. Mix just until the eggs are almost set and glossy.

Assemble

  • Pre-heat oven to 425F.
  • Add a nice layer of eggs to the bottom of each ramekin. Followed by the sautéed veggies, shredded cheddar and the sausage gravy.
  • Top with the prepared biscuit dough. Spread out evenly and place each ramekin on a baking sheet.
  • Bake until the biscuit topping is cooked through and golden brown, about 18-20 minutes.
  • As soon as they come out of the oven, brush on the honey butter and serve. Enjoy!

  • 8 southern homestyle biscuits I used Pillsbury Grands
  • 1 cup heavy cream

Blueberry Filling

  • 2 cups blueberries fresh or frozen
  • 1/4 cup sugar
  • 1/4 cup water
  • 1 tbsp cornstarch
  • 1 tsp lemon zest
  • 1/4 tsp nutmeg

Cream Cheese Drizzle

  • 4 oz cream cheese softened
  • 1/4 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract

Streusel Topping

  • 1 1/2 cups flour
  • 2/3 cup dark brown sugar
  • 1/2 cup melted unsalted butter room temperature
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Instructions

Blueberry Filling

  • In a pan over medium heat add all ingredients listed under “Blueberry Filling." While stirring constantly bring to a simmer. Allow to cook for 6-8 minutes.
  • As the blueberries start to break down the sauce with thicken. Once thick, remove from heat and set aside.

Cream Cheese Drizzle

  • In a bowl, add all ingredients listed under “Cream Cheese Drizzle” and mix until smooth and set aside.

Streusel Topping

  • In a bowl, add all ingredients listed under “Streusel Topping” and using a fork mix together until it starts to clump together like wet sand. If it’s too wet, add in a little flour at a time until it meets the correct consistency.

Assemble

  • Pop open the tube of biscuits, divide each biscuit into 4 equal pieces and spread out evenly at the bottom of a 6×9 baking dish.
  • Pour the heavy cream over top, followed by half of the cream cheese drizzle then dollop the blueberry filling throughout.
  • Sprinkle on the streusel topping, place in a 350F preheated oven uncovered and bake for 30 minutes.
  • Once cooked, top with remaining cream cheese drizzle as soon as it comes out of the oven.
  • Allow to cool 10-15 minutes before cutting into it to allow everything to settle into place.
  • Enjoy!

It is brunch time again, folks! Today I am sharing with you a simple and easy breakfast/brunch dish that is perfect for you and your guests! The breakfast BLT aka the BELT (Bacon, Egg, Lettuce & Tomato) sandwich will quickly become a favorite, especially once you’ve tried it. I used sourdough bread because after toasting it, it holds up really well. But if you don’t have it (or like it), ciabatta bread works just as well. I also made a delicious basil garlic aioli – It sounds super fancy, but it’s so easy and it takes this sandwich to levels other sandwiches can only dream of reaching. The recipe serving is for one sandwich, but that can easily be multiplied to satisfy any appetite.

Let’s get started! First things first lets take a look at our ingredients:
 

Ingredients

It’s really simple and uses basic things that you most likely already have at home!

 

Basil Garlic Aioli
So let’s make that fancy spread 🙂 Combine the mayo, basil, and garlic in a bowl and mix thoroughly. Add salt and fresh cracked pepper to taste.

See, that wasn’t hard at all! And the best part is that it taste amazing! Set aside and let the flavors marry while you get everything else ready.

 

Cooking Time
First, melt 2 tbsp. of butter in a large pan and toast both sides of the sourdough bread for a few minutes. Once golden brown, set aside. Next, take 2 slices of bacon and cut them in half. Cook until you reach desired doneness. Let the bacon rest on a plate lined with paper towel to absorb any excess oil. Doing so will keep your bacon nice and crispy! Finally, add a tbsp. of olive oil to a skillet and cook your eggs however you desire.
I love the look of a sunny side egg with a runny yolk… you just can’t beat that! An over-medium egg also works just fine, or you can also choose to use egg whites or scrambled eggs. You can customize each sandwich to everyone’s liking, so the possibilities are endless!

 

Time to Assemble
Spread the basil garlic aioli on one side of each of the toasted sourdough bread. Add the mixed greens first, then a couple of sliced tomatoes, bacon, and a fried egg.

You can also enjoy this sandwich open faced – either way, it’s amazing! This is almost too pretty to eat… lol, jk.

  • - Melt 2 tbsp. of butter in a large pan over medium heat. Toast the sliced sourdough bread for a few minutes on each side, until golden brown. Set aside.
  • - Cut a couple of strips of bacon in half and cook until desired doneness. (Tip: Set aside on a paper towel to drain some of the oil away to make the bacon extra crispy)
  • - In a skillet over medium heat, add 1 tbsp. of olive oil and cook eggs until desired doneness - If you want a runny yolk, sunny side up or over medium works best!

To assemble your Egg BLT

  • - Spread the basil garlic aioli on one side of each of the toasted sourdough bread.
  • - Add mixed greens, tomato slices, and bacon to bottom slice.
  • - Top with a sunny-side up eggs.
  • Enjoy!

Grocery Stores vs. Farmers Markets – Which is better for your tummy and wallet?

Grocery stores are great and convenient but tend to carry just the essentials and a bunch of the same stuff owned by literally 5 conglomerates. They are also over priced because of this said “convenience”. But lets be honest, most of the aisles are becoming full of more and more processed items and it seems like making a heathy meal cost more than a burger and fries combo (we all should be worried!). Not to say that deals can’t be found at grocery stores, they can, but they are far and few in between. Especially on the things that should be a part of daily diets.

Wouldn’t you love a place that offers veggies and produce at a decent price and organic options? Sounds like a dream right? But its not! These places are real and they are called farmers markets. Nowadays, you can find them right around the corner from where you live. Once you’ve found one, you will never bother with your local grocery stores. The savings are incredible! I always pick up my fruits, veggies and meats from a famers market. They are built for bulk buying, enough to feed a couple or a family of 4 on a budget and great for meal prepping. The other day I was able to get 10 limes for a dollar! Those same limes were selling 2 for a dollar at my local grocery store. What’s crazy, is that they are selling the exact same limes, but are charging you for “convenience” (mind blowing – I know!). They also sell meat in bulk which you can turn around and make enough food for lunch for an entire week. Farmers markets are the best way to go for meal prepping and saving money. So don’t be fooled any longer and find your local farmers market and start saving today!

Sage Chicken & Cauliflower Rice and Peas / Steak Egg Cups

Planning is everything when it comes to meal prepping. Knowing what you’re going to have and make is key to eating right for the week. Make sure you have containers, baggies and other packing essentials.  Many recipe can be multiplied to accommodate you for an entire week’s worth of lunch and breakfast! For example, I came up with these Steak Egg Cups that are full of protein and can be made ahead of time to enjoy every morning. The best part of these cups is the ingredient are interchangeable. If you’re not into steak change the protein or just load up on veggies, or you can just go egg whites. Great recipe to have especially when you’re on the go like most people these days. Don’t forget about lunch now! This Sage Garlic Chicken and Mushroom w/ Cauliflower Rice & Peas recipe is fantastic and packed with flavor.You can pair it with rice and veggies or try Cauliflower Rice as an alternative if you’re watching your carb intake. I love chicken thighs! If you’re going to cook chicken, cook pieces that are forgiving and have tons of flavor. Unlike breast meat, it’s very difficult to dry out thigh meat, especially if you cook it with the bone in. Also, bone-in meat of any kind tend to be cheaper than boneless. Simply because the labor of removing that bone and/or skin is added to the final cost. So save a few bucks and buy bone in! Both recipes are extremely simple and cost effective. The egg cups cost less than a dollars per serving and the chicken and cauliflower rice comes in right around $2.50 per serving!

Snackin’ – The most important meal of the day!

Snacking can be a pleasure and a punishment on your diet. Snack machines are convenient, but planning ahead really takes that temptation out of the equation. I like to limit my carb intake everyday so for snacks I like to pack fresh sliced fruits like watermelon, oranges, peaches, grapes, etc. This step really completes your meal prep circle. Instead of impulsively hitting up the snack machine for a bag of chips, you can save that dollar and be prepared. If you want something with more bite, this recipe for Cashew Almond & Cranberry Bites is perfect. It’s sweetened with natural honey, it has almonds to provide a nice boost of fiber, and cashews to give you a balance of good fats and protein. Making these small changes to your diet can make a world of difference in the long run.

Balance Is Everything – A little bit of everything makes a whole ‘lotta sense.

Going into meal prepping, people think the food choices have to be boring or flavorless. In reality, it’s exactly the opposite. You are in full control here. You put what you want into every meal and snack you take with you. This idea of meal prepping can be detailed to fit your lifestyle and taste. You just have to remember to balance what you eat. Meal prepping isn’t about starving your body. It’s about nourishing and providing it with a balanced menu of proteins, good fats, fiber, vitamins and the essential blocks to keep your body right. Saving money is just an added bonus. Carbs are my weakness, I don’t cut them out completely, but I do my best to replace them through the day and week. We’ve become accustomed to having carbs at every meal. Yes, we need carbs – but honestly unless you have plans to use that extra energy you’re eating, you can eat less of it and still feel fulfilled, I promise!

Water is Life – Respect it! 

We have grown so accustomed to drinking a lot of our daily calories. The biggest issue here is the fact that 99% of those drink are filled with chemicals and lots and lots of sugar. Soda and juice aren’t evil, in moderation they are perfectly fine. I gave up soda and sugary juices a long time ago solely on the fact that one can of soda has more sugar than the recommended amount for daily consumption. Water is literally the liquid of life. Switching to drinking water throughout the day and only drinking calorie rich drink every once and a while is a step in the right direction. You will find yourself feeling better and nourished through the day. Plus, water helps keep your entire body hydrated.

Know Your Foods – If the ingredients don’t make sense, don’t eat it!

!!!!Public Service Announcement!!!! Stop buying “diet” and “no calorie” anything. PLEASE! I know it sounds good to be able to eat cake and cookies because they are sugar free or have zero calories, but it’s not! Calories are fuel for our bodies and most everything has a calorie. If something has zero calories and can sit on a shelf forever, then it’s not something you want to be putting into your body. 99% of the time companies have to replace the flavor they lose by taking out the “calories” – so in return they either pack them with artificial sugars or chemicals made to make it taste “better”. If the ingredients don’t make sense don’t eat it. Instead of buying packaged and processed foods, learn to make your favorite things and treat yourself! It’s not bad to have a home-made cookie every now and then 🙂 Just remember, in moderation!

I try to live by these steps. I know getting it right with food is hard but you can do it! Meal Prepping will not only save you money, but it’ll give you full control of your eating options and helps keep temptations in line. Eggs are a fantastic protein and easy to use in the kitchen. There are a zillion ways to make them, but today I’m gonna share with you the easiest way to make fluffy scrambled eggs!

Some tips to remember:

Use Butter
Butter helps keep the eggs creamy and adds to the final texture and flavor. Since this recipe doesn’t call for cream or milk you want to use butter instead of oils.

Go Non-Stick
Using non-stick makes life so much easier especially when making eggs. So, make sure you have a good non-stick skillet and spatula. The cooking gods will shine down on you with perfect eggs :).

Add-Ins
Don’t be afraid to throw any and everything into your eggs. From spinach to cooked bacon, or the kitchen sink, it all works lol. But seriously, add-ins are the best way to lift your eggs to another level of greatness. I love to use cooked bacon, tomatoes, spinach and top it all off with some sriracha hot sauce…yum!

last but least….

DO NOT OVERCOOK
You want light and fluffy eggs, not bouncy eggs. If they are dancing around in your skillet you’ve gone to far!  To achieve that, you must be able to dedicate 3 minutes to your eggs while cooking. No distractions, no interruptions! Pay attention and show your eggs some love. The stirring process is key and will help you get your eggs to that creamy and fluffy consistency you know and love and find at your favorite breakfast and brunch spots.

Fluffy Scrambled Eggs

Prep Time 2 minutes
Cook Time 3 minutes

Ingredients

  • 2 large eggs
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  • In a skillet over low-medium heat, melt 2 tbsp of butter.
  • Once small bubbles start to form, beat 2 large eggs with a pinch of salt and pour into your buttered skillet.
  • Add-ins: At this point you can add anything additional your heart desires. Like, shredded cheese, spinach, cooked bacon, etc. the possibilities are endless!
  • Stir with a non-stick spatula until large curds start to form and the eggs are fully cooked about 2-3 minutes.
  • Tips: If you like larger curds use a large sweeping motion to stir while cooking, but if you like smaller curds, stir in a circular motion. Making smaller circles will help break up the curds while cooking. Don’t over cook your eggs! Egg is a protein and will continue to cook for a minute or two once plated, so remove from heat while the curds are still a bit loose.
  • Remove from heat while the curds are still loose and stir one last time before plating.
  • Top with fresh cracked pepper and serve immediately!

Brunch has become my favorite meal to eat, especially on a lazy sunday. Just think about it, breakfast and lunch items join in food matrimony… I now pronounce you eggs & french toast lol. See what I did there ;). The best thing about brunch is the fact that you can pretty much eat anything you want with a breakfast theme. Whoever came up with that idea deserves at the least a pat on the back.

By far, the best and most essential dish for brunch is of course, King’s French Toast! I love this stuff, this is the bees double knees! Of course, like everything else, this is an original recipe by yours truly and definitely hits the brunch spot every single time. French toast is simple and a great way to use up bread that you may not have plans for or thats been there for a couple days. But you can’t just use any old bread… You have to use a bread that can with stand your batter and hold up during cooking – I’ve found that challah bread works best! It’s a soft and beautiful bread that’s braided to give it a unique look and texture. It works perfect for french toast, especially if it’s a couple days old (it’ll hold more of that delicious batter). I’m lucky enough to live in walking distance to a bakery. It’s a gift and a curse, especially in the morning when you can smell the bread being baked. Its pure torture! Lol.

For this recipe, I wanted a refreshing cinnamon citrus batter. So, decided to add fresh orange zest, a bit of honey and vanilla extract to round out the eggy deliciousness of the batter. The orange zest really completes the dish. Every piece comes out fluffy and the flavors really hits you in layers. Now being that this is my french toast recipe, I wanted to taste that syrup and butter in every bite! Which lead me to creating the maple butter glaze. It’s simple and the recipe for that is included as well!

King's French Toast

Prep Time 5 minutes
Cook Time 6 minutes

Ingredients

  • 8 slices of Challah bread
  • 5 large eggs
  • 1 cup of whole milk
  • 1 tsp pure vanilla extract
  • 2 tsp cinnamon
  • 1 tbsp organic honey
  • 1 tbsp fresh orange zest
  • Unsalted butter for cooking
  • Maple Butter Syrup
  • 4 tbsp butter
  • 1 cup maple syrup

Instructions

  • To make the maple butter syrup, heat maple syrup and butter slowly over low heat. Once butter is melted remove from heat and set aside.
  • In a large bowl combine eggs, milk, vanilla extract, cinnamon, honey, and orange zest. Whisk until fully incorporated.
  • Melt two tbsp of unsalted butter in a large skillet over medium heat.
  • Dip your Challah bread pieces into the egg mixture, coating each side evenly.
  • Tip: The fresher the bread the less time it should spend in the egg batter. So if it’s fresh from the bakery just a quick dip; no more than a couple of seconds should do. If the bread is a couple days old about 3-5 seconds is more than enough time to soak up the batter.
  • Once coated, cook the pieces for 2-3 mins on each side until golden brown. Adding butter to the skillet as needed to prevent burning.
  • Plate and garish with fresh fruit, a drizzle of maple butter, and powdered sugar.
  • Enjoy!
