Ingredients

  • 5-6 slices brioche about 1 1/2 to 2 inches thick
  • 1 cup mild cheddar cheese shredded
  • 6 slices American cheese chopped
  • 5-6 breakfast sausage patties cooked and chopped

Fluffy Eggs

  • 4-5 large eggs beaten
  • 2 tbsp unsalted butter
  • 1/2 tsp salt

French Toast Batter

  • 1/2 cup milk
  • 2 large eggs
  • 1 tsp brown sugar
  • 1 tsp orange zest
  • 1/2 tsp cinnamon

Instructions

Fluffy Eggs

  • To a pan over medium low heat add butter. Once the butter is melted, pour in the beaten eggs and gentle move around the pan bringing the outside into the center until large curds start to form.
  • Season with salt and pepper and cook until the eggs are fluffy.

Breakfast Filling

  • Once the eggs are cooked, transfer to a bowl with the cooked breakfast sausage, American cheese and cheddar cheese. Gently mix together and set aside.
  • French Toast Batter
  • To a bowl, add all ingredients listed under “French Toast Batter.” Beat until fully incorporated and set aside.

Assemble

  • Make an opening through the bottom of each slice of brioche. Be careful not to cut through the bread.
  • Stuffed the opening of each slice with the breakfast filling and gently press around the opening to seal.
  • Heat a pan over medium low heat and add a few tabs of butter.
  • Dip each stuffed slice of brioche into the French toast batter making sure it’s evenly coated.

Whats better than having breakfast ready and convenient? Nothing! This is a recipe I’ve been using for the longest time to make sure I get my breakfast in every morning. It has steak, diced peppers, onions, and mushrooms. The best part is that every ingredient is interchangeable. You can substitute the steak with any protein, like bacon, sausage, turkey bacon or just load up on veggies! You could even do all egg whites if you’re watching your cholesterol. They’re full of protein, they’re paleo friendly and portable; a couple of bites and it’s all gone! Works great for all of us that are always on the go.

I love to sleep in the AM, and even though I often don’t, those extra 15 minutes make a difference to me – lol. So hit snooze button and meal prep these steak egg cups in advance! You’ll thank me later ;).

Steak Egg Cups

Prep Time 10 minutes
Cook Time 35 minutes

Ingredients

  • 1 lb steak chopped
  • 12 large eggs
  • ½ cup peppers diced (green and/or red)
  • ½ cup onions diced
  • ½ cup mushrooms diced
  • Salt and pepper to taste

Instructions

  • Heat 2 tbsp olive oil in a cast iron skillet over high heat. Also, pre-heat your oven to 350 degrees.
  • Once your skillet is starting to smoke, add your steak and sauté until browned.
  • Then add the diced peppers, onion and mushroom and cooking until the vegetables start to brown. Once browned, remove from heat and set aside.
  • Add 1 tbsp of the steak, peppers, onion and mushroom mixture into each of the non-stick muffin tin cups. Should be enough for a 12 section muffin tin
  • Crack one egg into each muffin cup and gently mix your egg around to break the yolk. Top with salt and pepper to taste and any remaining of the steak, peppers, onion and mushrooms.
  • Bake for 25 mins until the eggs are set. Remove from oven and let cool for 10 mins before trying to take out the cups from the muffin tin.

Eggs are a fantastic protein and easy to use in the kitchen. There are a zillion ways to make them, but today I’m gonna share with you the easiest way to make fluffy scrambled eggs!

Some tips to remember:

Use Butter
Butter helps keep the eggs creamy and adds to the final texture and flavor. Since this recipe doesn’t call for cream or milk you want to use butter instead of oils.

Go Non-Stick
Using non-stick makes life so much easier especially when making eggs. So, make sure you have a good non-stick skillet and spatula. The cooking gods will shine down on you with perfect eggs :).

Add-Ins
Don’t be afraid to throw any and everything into your eggs. From spinach to cooked bacon, or the kitchen sink, it all works lol. But seriously, add-ins are the best way to lift your eggs to another level of greatness. I love to use cooked bacon, tomatoes, spinach and top it all off with some sriracha hot sauce…yum!

last but least….

DO NOT OVERCOOK
You want light and fluffy eggs, not bouncy eggs. If they are dancing around in your skillet you’ve gone to far!  To achieve that, you must be able to dedicate 3 minutes to your eggs while cooking. No distractions, no interruptions! Pay attention and show your eggs some love. The stirring process is key and will help you get your eggs to that creamy and fluffy consistency you know and love and find at your favorite breakfast and brunch spots.

Fluffy Scrambled Eggs

Ingredients

  • 2 large eggs
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  • In a skillet over low-medium heat, melt 2 tbsp of butter.
  • Once small bubbles start to form, beat 2 large eggs with a pinch of salt and pour into your buttered skillet.
  • Add-ins: At this point you can add anything additional your heart desires. Like, shredded cheese, spinach, cooked bacon, etc. the possibilities are endless!
  • Stir with a non-stick spatula until large curds start to form and the eggs are fully cooked about 2-3 minutes.
  • Tips: If you like larger curds use a large sweeping motion to stir while cooking, but if you like smaller curds, stir in a circular motion. Making smaller circles will help break up the curds while cooking. Don’t over cook your eggs! Egg is a protein and will continue to cook for a minute or two once plated, so remove from heat while the curds are still a bit loose.
  • Remove from heat while the curds are still loose and stir one last time before plating.
  • Top with fresh cracked pepper and serve immediately!
