  • Heat a cast iron pan to medium heat. Starting with the fat cap, sear the steak on all sides for 1-2 minutes. Once a good crust has developed, add some unsalted butter to the pan and bast the season for the final minute of the cook time.
  • The cook time will vary depending on the doneness you want to achieve. 1-2 minutes per side will give you a medium rare finish.
  • Once the steak reaches your preferred doneness, rest in aluminum foil.

Creamy Ramen

  • Bring 3 cups of water to a boil and add the ramen noodles. Follow cooking instructions to make sure they cooked through.
  • Once cooked, remove the noodles and place them in the serving bowl leaving the broth in the pot to continue cooking. Add the carbonara seasoning packet and a cup of heavy cream and allow the broth to thicken and reduce. This should take about 4-5 minutes.
  • This ramen does also come with a spicy packet, approach with caution, a little goes a long way. I decided not to use it since I added chili crisp at the end.

Assemble

  • Now that the broth is thick and creamy, pour over the noodles in the serving bowl.
  • At this point the steak is well-rested, slice into piece and add to the ramen with one of the seasoned soft boiled eggs. Garnish with green onions, chili crisp and enjoy!

Pesto

  • In a food processor add in the basil, parmesan, garlic and pine nuts.
  • Mix on low and drizzle in olive oil until combined. Refrigerate until ready to use.

Pasta

  • Cook pasta according to instructions. Once cooked reserve 1 cup of pasta water and strain the rest.
  • In a pan over medium heat add 1/4 cup of pesto and stir to lightly cook. Add in the heavy cream and stir until combined.
  • Next add in Parmesan cheese and salt and pepper to taste.
  • Allow sauce to slightly thicken enough to coat the back of a spoon.
  • Add in the cooked pasta and stir to combine. Use the reserved pasta water to thin out sauce if need.
  • Garnish with basil and more parmesan and serve immediately.

  • 1 lb ground beef
  • 12 oz can crushed tomatoes
  • 16 oz rigatoni pasta cooked
  • 1 cup heavy cream
  • 1 cup onion chopped
  • 1/2 cup parmesan cheese grated plus more for garnish
  • 4 cloves garlic sliced or chopped
  • 1 tbsp oregano dried
  • 1 tbsp basil chopped plus more for garnish
  • 1 tbsp Olive oil
  • 2 tsp salt
  • 2 tsp pepper
  • 1/2 tsp sugar

Instructions

  • In a large pot over medium heat, add olive oil. Form ground beef into a large patty and add to the pot.
  • Don’t break up the meat. Allow to cook in one large piece. This will help with browning and keep the meat juicy.
  • Let cook for 4-5 minutes then flip and cook for an additional 4-5 minutes.
  • Once both sides are browned, break meat up into little pieces.
  • Then add 1 cup of chopped onion, 1 tsp salt, 1 tsp pepper and garlic to the browned meat. Stir to combine.
  • Add in 1 can 12oz can of crushed tomatoes.
  • *feel free to add some water to thin out your sauce if its too thick.*
  • Add in 1 tsp salt, 1 tsp pepper, 1/2 tsp sugar, 1 tbsp dried oregano, 1 tbsp chopped basil. Stir to combine. Cover and allow to cook over low heat for 20-30 minutes.
  • After 20-30 minutes, add 1 cup heavy cream. Stir to combine.
  • Then add 1/2 cup grated parmesan cheese. Mix throughly.
  • Add in the cooked rigatoni and mix until well combined.
  • Plate and garnish with more parmesan and basil.

Growing up in the great state of New Jersey, I was fortunate enough to live in a state that had a diversified food selection. Plus, New York City was so close and you can’t beat the food scene in NYC! I love any pasta related dish (who doesn’t right?), so of course I had to share this lasagna recipe with the world! Any time I cook pasta I always remember the first food I ever cooked; ramen noodles. There I was at seven years old, kneeling on a chair so I could see into the pot while I was cooking. I lost two spoons and a fork in the pot trying to make it too, lol. It was soggy and sticky but I loved it because I made it. I was so proud of myself… I ate every single bit of it. Truly humble beginnings, but look at me now making lasagna! I made it to the big league!

I love this recipe, and you will too! It’s a classic dish and the fresh basil and tomato lends a refreshing flavor and aroma to every bite you take. I like to use turkey sausage to add some lean protein, really keeps the entire dish light and flavorful. At the same time, it’s cheesy and creamy from the homemade sauce and fresh shredded mozzarella. I also chose to roll the lasagna up with the ingredients inside instead of the traditional layers. I found that it’s easier to serve and the ingredients stay intact really well once cooked. It is a little more work, but I promise you will love the difference. Caprese Turkey Sausage Lasagna

Ingredients

  • 1 lb mild or hot Italian turkey sausage
  • 8 lasagna noodles
  • 3 tbsp butter
  • 4 tbsp all purpose flour
  • 2 cups chicken broth
  • 2 cups whole milk
  • 3 cloves garlic finely chopped
  • Salt and pepper to taste
  • 8 roma tomatoes thinly sliced
  • 2 cups mozzarella cheese
  • ¾ cup fresh chopped basil

Instructions

  • Preheat oven to 375F. Cook pasta in a large pot of salted, boiling water. Drain pasta right before al dente, and coat with olive oil to prevent sticking.
  • Heat a large skillet at medium heat. Remove turkey sausage from casing and sauté until golden brown. Make sure to break up the meat as it cooks to help evenly cook the meat. Once browned, set aside.
  • Heat 3 tbsp of butter over medium low heat. Once melted, sprinkle 4 tbsp of flour and whisk until combined. Let cook for 30 seconds then slowly add 2 cups of chicken broth to the flour and butter mixture to prevent lumps.
  • Once fully incorporated, let cook for another min. Then slowly stir in 2 cups of whole milk. Add chopped garlic, salt and pepper to taste, and cook for 8-10 mins.
  • Cover bottom of a 9x13 baking dish with the sauce you created.
  • On a cutting board, take one lasagna noodle and spread sauce down the middle leaving ½ an inch at each end empty to help seal once rolled.
  • Layer 4 slices of roma tomato across the noodle and top with about 1 tbsp cooked turkey sausage then sprinkle with cheese and basil. Drizzle with more sauce, and then add 4 more slices of roma tomato on top. Start at one end, and fold over the ½ you left empty then proceed to rolling the noodle into a spiral, keeping everything intact. Repeat 7 more times and arrange in 9x13 baking dish.
  • Drizzle evenly with remaining sauce, mozzarella cheese, and sausage. Top each roll up with a slice of roma tomato and freshly chopped basil.
  • Bake covered with aluminum foil for 30 mins, then uncover and cook for an additional 10 mins until top is bubbling and slightly browned.
  • Top with fresh basil and let cool for 5-10 mins before digging in, Enjoy!
