- 1 tsp oregano

- 1 cup sour cream
- 1/4 cup mayonnaise
- 2 chipotle chile peppers in adobo
- 1/2 small onion
- 2 tbsp lime juice
- 1 tsp garlic
- 1 tsp parsley
- 1 tsp sugar
- 1/4 tsp paprika
- Salt to taste
- Pepper to taste

- Let it marinate in the fridge for at least 30 minutes up to 24 hours.
- Once marinated, heat your grill to 450-500F.
- Add the skirt steak to the grill and cook for 3-4 minutes per side or until you’ve reached your desired doneness.
- Once cooked, set aside to rest for 4-5 minutes before cutting.
