Ingredients

  • 9 Taco Tortillas
  • Mozzarella cheese

Mojo Steak Marinade

  • 1 12oz Skirt steak
  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • 1 tbsp lime zest
  • 1 tbsp orange zest
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 1/2 tsp salt
  • 1 1/2 tsp pepper
  • 1 tsp oregano

Creamy Chipotle

  • 1 cup sour cream
  • 1/4 cup mayonnaise
  • 2 chipotle chile peppers in adobo
  • 1/2 small onion
  • 2 tbsp lime juice
  • 1 tsp garlic
  • 1 tsp parsley
  • 1 tsp sugar
  • 1/4 tsp paprika
  • Salt to taste
  • Pepper to taste

Garnish

  • Guacamole
  • Cilantro chopped

Instructions

Creamy Chipotle

  • To a blender, add all ingredients listed under “ Creamy Chipotle” and blend until smooth. Place in the fridge until you’re ready to serve.

Mojo Steak Marinade

  • In a large dish add all ingredients listed under “Mojo Steak Marinade.” Mix thoroughly to ensure the steak is covered in the marinade.
  • Let it marinate in the fridge for at least 30 minutes up to 24 hours.
  • Once marinated, heat your grill to 450-500F.
  • Add the skirt steak to the grill and cook for 3-4 minutes per side or until you’ve reached your desired doneness.
  • Once cooked, set aside to rest for 4-5 minutes before cutting.

Assemble

  • To a pan over medium heat, add a tortilla followed by some mozzarella cheese and the cut up skirt steak.
  • Fold the tortilla over to close and cook on both sides until the taco is crispy and golden.
  • Serve with some guacamole, the creamy chipotle sauce and cilantro. Enjoy!
