- 9 Taco Tortillas
- Mozzarella cheese
Mojo Steak Marinade
- 1 12oz Skirt steak
- 1/2 cup orange juice
- 1/4 cup lime juice
- 1 tbsp lime zest
- 1 tbsp orange zest
- 1 tbsp olive oil
- 1 tsp cumin
- 1 1/2 tsp salt
- 1 1/2 tsp pepper
- 1 tsp oregano
Creamy Chipotle
- 1 cup sour cream
- 1/4 cup mayonnaise
- 2 chipotle chile peppers in adobo
- 1/2 small onion
- 2 tbsp lime juice
- 1 tsp garlic
- 1 tsp parsley
- 1 tsp sugar
- 1/4 tsp paprika
- Salt to taste
- Pepper to taste
Garnish
- Guacamole
- Cilantro chopped
Mojo Steak Marinade
In a large dish add all ingredients listed under “Mojo Steak Marinade.” Mix thoroughly to ensure the steak is covered in the marinade.
Let it marinate in the fridge for at least 30 minutes up to 24 hours.
Once marinated, heat your grill to 450-500F.
Add the skirt steak to the grill and cook for 3-4 minutes per side or until you’ve reached your desired doneness.
Once cooked, set aside to rest for 4-5 minutes before cutting.
Assemble
To a pan over medium heat, add a tortilla followed by some mozzarella cheese and the cut up skirt steak.
Fold the tortilla over to close and cook on both sides until the taco is crispy and golden.
Serve with some guacamole, the creamy chipotle sauce and cilantro. Enjoy!
