Lobster Caesar Croissant

- 2 croissants sliced and toasted
- 2 cups romaine lettuce chopped
- 1/2 cup Parmesan cheese shaved
Creamy Caesar Dressing
- 3 large egg yolks
- 1/2 cup olive oil
- 1/2 cup Parmesan cheese shaved
- 2 tbsp lemon juice freshly squeezed
- 3-4 anchovy fillets
- 1 tbsp garlic minced
- 1 tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1/2 tsp Worcestershire sauce
- 1/2 tsp black pepper
- Salt to taste
Buttery Lobster Filling
- 1 lb lobster meat cooked
- 4 tbsp butter
- 2 tbsp shallots minced
- 1 tbsp garlic minced
- Salt to taste
- Black pepper to taste
Toasted Panko Breadcrumbs
- 1 cup panko breadcrumbs
- 5 tbsp unsalted butter
- Pinch of salt
Creamy Caesar Dressing
In a blender (or a tall container if using an immersion blender) or food processor, add all ingredients listed under “Creamy Caesar Dressing” and blend until smooth.
Season with salt to taste. Once fully incorporated, set in the fridge until you’re ready to serve.
Toasted Panko Breadcrumbs
In a pan over medium-low heat, melt the butter.
Once melted, add the panko breadcrumbs and a pinch of salt.
Stir continuously, moving the breadcrumbs around until they turn golden brown, about 3-4 minutes. Once golden, remove from heat and set aside.
Buttery Lobster Filling
Heat butter in a pan over medium-low heat. Once melted, sauté minced shallot and garlic until fragrant, about 2-3 minutes.
Turn off the heat and stir in the cooked lobster meat. Mix just until the lobster is warmed through and remove from heat.
Assemble
In a large bowl, combine the chopped romaine lettuce, Caesar dressing, toasted panko breadcrumbs, and shaved Parmesan cheese. Mix until well combined, then set aside.
Spread a generous layer of Caesar dressing on the toasted bottom halves of the croissants.
Followed by a hearty mound of the buttery lobster, then a generous portion of Caesar salad, more Parmesan cheese, and extra dressing.
Finish with the top toasted croissant half. Serve with a side of Caesar dressing and enjoy!
